29.09.2023
In Russia, they traditionally ate "according to the season" and the richest table was always in autumn. The harvest has been completed and there are large stocks of vegetables in the cellars - cabbage, beetroot, onion, garlic and others. Our ancestors ate them both raw and salted, baked, boiled, steamed. Following Russian traditions, Anton Krupenin, brand chef of the SheLESt restaurant, updates the menu with seasonal products and offers both completely new and updated dishes.
This fall, we continue to surprise you with dishes made from seemingly ordinary products. Beetroot, beloved by many of our guests, is now dried with goat cheese and cherry-raspberry sauce, and glazed carrots are served with green pesto.
In autumn, mushroom dishes often appeared on the tables. They were actively harvested and harvested for the winter. Mushroom soup with baked potatoes or cabbage soup stewed in the oven is especially pleasant in the coming cold weather.
The new menu features porridges indispensable on the Russian table: bulgur with lightly salted sockeye salmon, fresh vegetables and mint, millet with aged cheese sauce and turkey pastrami, spelt with squid and wild mushrooms, and Buckwheat with stewed duck. Porridge in Russia was a symbol of home well-being, and even a wedding feast was called porridge in the old days.
Also this fall, by popular request of our guests, a new menu section has appeared - Dumplings and dumplings. We suggest trying two versions of dumplings made according to old Russian recipes. Dumplings with walleye and stewed onion, as well as Borodino dough dumplings with pork and sauerkraut.
Well, as a compliment from the chef, we will offer you three types of bread from the oven - white bread with milk, rye bread with beer and oatmeal bread with cereals.
